My favorite demonstration was "Earth's Topography". I was blown away that Matlab could take a set of data and turn it into a 3D representation of the globe. I had previously thought Matlab was useful for mathematical purposes like complex integration, but I see now that it can be utilized for countless reasons. The simplicity of the program that created it was shocking to me as well.
