My Favorite MATLAB demonstration
I thought the Earth's Topography demonstration was interesting in the logical process that developed the final product. The code started by creating a 2-dimensional image and color coded it according to altitude that corresponded with each location on the map. Then it turned it into a global shape using 3-dimensional morphing.
