I thought the "Volume Visualization" example was my favorite, because I think that it is something very useful that is not readily available through other programs. The ability to see volumes and trends of graphs in multiple dimensions is quite important, but also the ability to visualize them in different forms is very applicable. I would imagine that this could be useful for Mechanical Engineering and being able to see how to build the best object in a given amount of space. Also, while graphs in 3-D can be found elsewhere, being able to see these with vectors, and "Streamribbons", and various other visualization tools will prove to be very handy in the future.
