My favorite MATLAB demonstration was the Loma Prieta Earthquake script. It was really interesting how MATLAB had data from an actual earthquake, not just made up numbers. It was also cool how by manipulating the data and performing calculations, MATLAB was able to produce multiple plots that, when combined, formed a 3D plot with three separate variables.
