Matlab Demos
My favorite out of the Matlab demos was the Loma Prieta Earthquake Demo. I liked this demo so much because it was cool to see how an engineer could take real world data from something like an earthquake and end up with a 3-d plot of the position changes in the ground caused by the earthquake.
