As for my favorite Matlab Demo, it is probably the Teapot, which can be found under the subheading "3-D Visualizations". I find this one fascinating because it takes math and makes a picture, a picture that can change with the slightest alteration to any of many variables. You can change color, shape, size, position, framework, etc. with adjustments to an equation.
