My favorite Matlab demonstration is the Loma Prieta Earthquake Analysis. In this demonstration, several data from the Loma Prieta Earthquake are collected, calculated and graphed. I find the demonstration very insightful because it not only shows many useful Matlab comments, but also tells me how to approach problems related to storing, graphing data that we do in class.
