The MATLAB demo that I most enjoyed was the Earthquake simulation. It was fascinating to see how MATLAB could plot and zoom in on certain points of the graph. The plotting on MATLAB is superb and can be used for a wide variety of things. It is really easy to rescale axes and in general create nice looking graphs.
