My favorite MATLAB demonstration is matrix manipulation. With Java being the only other language I know, I found the powerful matrix commands in MATLAB- Extracting matrices from within matrices, multiplying each element of a matrix with its corresponding element in another matrix and so on- very fascinating and see how useful MATLAB can be to carry out complicated calculations.
