My favorite MATLAB demonstration was the one about displaying topographical data, under Graphics, 3-D Plots and 4-D Visualization. I thought it was incredible that you could load real data from the National Geophysical Data Center and use it to create a topographical map, just through a few lines of code! In the demonstration, first a contour map is created, and then an image of the topography is created. The map can even be printed onto a 3D surface, to create a topographical globe. Favorite MATLAB demonstration
