My favorite MATLAB demonstration was Loma Prieta Earthquake because I thought it was an interesting application of data manipulation and plotting. It showed how  by manipulating data of the shock of the earthquake, one could plot the accelerations, integrate those to find velocity and position in 3-D space, and plot the trajectory of the earthquake.
