My favorite demonstration is the Mathematics: Basic Matrix Operations, Matrix Manipulation, Loma Prieta Earthquake. This is because I find the demonstration not only beneficial and very useful to someone who has no previous experience with MatLab, but it is also very interesting by using a real life case study such as the Loma Prieta Earthquake.
