My favorite demonstration was the "2-D Plots" demonstration.  The complexity of the graphs that Matlab is able to generate by way of relatively simple-to-type functions will be extremely useful and will make graphing extraordinarily efficient.  In addition, the demonstration's display of the information typed into the script and the graphs that resulted from that information made the steps for creating graphs very easy to follow.

My favorite demonstration was the "Game of Life" demonstration.  The ability to develop a program in Matlab that creates a transforming visual is very impressive - I was most amazed by how the display was constantly changing without changing any of the commands in the script.  It was also one of my favorites because this was the first time that I saw the programming that exists behind images in video games.
