I found the Matlab Demonstration entitled "Viewing a Penny" especially interesting. It describes the different ways that Matlab can display the surface of a penny. Different visuals can be displayed by using the contour command, by using a color map to display a Pseudocolor Plot, and by using color map with a different lighting model. I found this demonstration to be very cool because I really like contour maps.
