My favorite demonstration is the 3D surface plots demo because it allowed me to see the things I could do with a 3D plot, and as I am currently covering a 3D plotting section in Math 103, it is very useful to be able to visualize some of the graphs before performing any mathematical operations on them. Ultimately, the 3D plotting demo showed me a way to use matlab to help me in my math class.
