Hands down, my favorite MATLAB demonstration is the "'''Three-Dimensional Knot''' in the Gallery subcategory.  Aside from being very aesthetically pleasing, this script in MATLAB incorporates numerous functions and codes, many of which I don't know how to write yet but would definitely like to learn how to in the future.  Some of the codes I find interesting that this "program" includes are generating a surface, computing all of the vectors, dot products, computing the surface, and finally plotting the surface with all of it's features.  This is also by far the coolest thing on MATLAB that you could make.
