Matlab Demonstration
Earth's Topography was my favorite demonstration because prior to this demo I had never considered Matlab to be much more than a calculator with some cool programs. Seeing this mapping of the Earth expanded my view of Matlab as a whole and alerted me as to the diverse uses the program has.
