MATLAB Demonstrations
My favorite of the MATLAB demonstrations was Viewing a Penny. I enjoyed this demonstration because it showed multiple of the different possible plots you can create in MATLAB in visually appealing ways. It also gave a clear explanation of how to create these plots in the script example.
