My favorite demonstration in Matlab is the one showing us how to create a 3-D surface plot since it is a demonstration that is fairly easy to understand as it is run in an app and the basic commands are already there. It creates an interesting visual plot that I am able to see as 3-D, whereas the the 3-D plots are difficult to analyze.

Matlab Demonstrations
