My favorite Matlab Demonstration was 3D Surface Plots, because it allowed me to construct and modify graphs in 3 dimensions. I thought that it was amazing that Matlab could do all of this. 3 Dimensional graphs can be colored and modified to look extremely interesting and abstract.
