My favorite MATLAB demo was the 2-D and 3-D Plots. I enjoyed this one in particular because it was fascinating to see that a few, small changes in the code could result in such different looking graphs. I also liked it because the ability to easily define and view a 3-D plot seems very useful, and I imagine it will be helpful in the future when it is hard to visualize a particular plot from an equation alone.
