Matlab Demonstration
My favorite Matlab demonstration was Graphics: Earth's Topography. I didn't realize that Matlab could be used to create such complicated and interesting displays as 2d and 3d maps of our earth. What was particularly interesting to me about this demo was the assignment of colors to help visualize the altitude of different points on earth.
