My favorite demonstration was the Traveling Salesman demonstration. I liked this one because it used Matlab to not only calculate an efficient route to travel, but also continually ran to improve that route little by little. This demonstration clearly has practical applications because a traveling salesman could use the program to determine his own travel path.
