My favorite MATLAB demo was the demo for creating a basic plot interactively because it showed me how to present information in a way with which I can more easily interpret data, a skill that will be extremely helpful in any academic field.  Also, this demo showed me how to write programs that I can use to format data into certain types of plots without having to repeat the same processes constantly.  Lastly, this demo opened me to a method of making my numbers and figures appear more aesthetically pleasing and presentable.
