My Favorite Matlab Demonstration: 3D Plots of surfaces. It comes in handy when doing multivariable calculus or work with vectors in space by helping me to visualize shapes that are otherwise very difficult to envision. On top of that, my teacher will often show us actual matlab plots she made herself as a visual aid during class, which is very effective in that it helps us to visualize the surfaces without the aid of matlab or a computer.
