My favorite MATLAB Demonstration was titled "Earth's Topography" under the sub-heading "Graphics." In essence, this demonstration showed sample code that allows you to use MATLAB and data from NOAA's National Geophysical Data Center in order to create a two-dimensional topographical plot, a two-dimensional and colored image plot, and a phenomenal three-dimensional and colored representation of the earth.  I found this demonstration the most interesting simply because my experience with plotting data in MATLAB so far has been unfortunately limited to relatively simple two-dimensional plots of data sets. It goes without saying that I was awestruck when I realized that MATLAB could turn a set of NOAA data into a three-dimensional spherical representation of the earth in its topographic entirety complete with different colors to represent water and different altitudes as well illumination from two distinct light sources. All in all, this demonstration was not only succinctly informative but also elegantly fascinating.
