My favorite MatLab demonstration was the one titled "3D Plots" because of its flexibility. It allows you to graph an equation in 3D and change the color scheme based on the peaks as you would like. I could see this being useful in multivariable calculus when you need help visualizing what an equation would look like in 3D.
