My favorite MATLAB demonstration was the "Visualizing Earth's Topography" demo. I would have never thought of this use for MATLAB, so I thought it was a really interesting example of some of the more creative uses of MATLAB. Since I am learning about level sets in math currently, I thought that this was a good tie-in to something I'm studying and one of its real world applications.
