My favorite Matlab demonstration is "Viewing a Penny". This shows how a user can employ Matlab to visualize a penny using a contour plot, two different psuedocolor plots, and a surface plot with a colormap. This is my favorite demonstration because it shows the versatility of Matlab's abilities with regard to generating images, which can be invaluable for the user when he or she wants to see the same image or data represented in multiple ways.
