My favorite demonstration in for the MATLAB homework was the demonstration concerning multidimensional matrices.  It is easy for me to visualize matrices in two dimensions however once a third dimension is introduced it is increasingly difficult to grasp. Additionally, the math involved becomes more complex. I think it is interesting how MATLAB can assist the user in simplifying operations and reducing the work involved using fairly simple functions.
