My favorite Matlab demonstration was the one on 3-D Plots. This is because I usually have a lot of trouble picturing plots and graphs in 3 dimensional space, so I liked exploring all the different functions that matlab has to help make those plots clearer. There are a large variety of different functions that matlab allows you to do when using 3-D plots, such as changing the colors or using a mesh-like display.
