My favorite demo on Matlab to see was the Minesweeper one. It was really interesting to see how a game I've been playing since I was a child is really just built with series of matrices. Looking through the code was fascinating as well, as I was able to see the vast variety of applications things like nested for loops can have. I really appreciated being able to see the graphical demonstration (the game window) and then go in and look at exactly what code makes that possible.
