MATLAB Demonstrations
My favorite MATLAB demos were probably the 3D plots and surface plots. I've always seen those type of "graphs" in movies and always thought they were really cool. Being able to digitize something three-dimensional really helps put things into perspective (like understanding the altitude of a mountain relative to sea level the higher you climb).
