My favorite MATLAB demonstrations were the Graphics: "2-D Plots," "Earth's Topography," and "Viewing a Penny."  I enjoyed the "2-D Plots" demo because it seemed like something I could see myself using very often.  I enjoyed the "Earth's Topography" and "Viewing A Penny" demos simply because they simply showed a cool representation of the graphical power of MATLAB.
