My favorite demonstration was "Viewing a Penny" under the "Graphics" category of demonstrations. It was interesting to view the different ways in which an image/model can be created through MATLAB simply from a set of given measurements of the penny. It would be very useful in engineering to be able to create various types of models through MATLAB.
